How to surprise your family with a delicious sancocho soup.

Sancocho is a traditional Colombian dish; It is one of the most desired by locals and tourists. Its preparation is considered an art, since it can have various variations. Traditional families used to do it in firewood. Nowadays, it is common to see this type of preparation mostly at certain festivities.  Over time this recipe has evolved allowing its preparation at home with ease and at the same time allowing kitchen lovers to integrate new versions and ingredients that generate new smells and flavors.

To start with the preparation of this delicious soup, it is necessary to define what type of protein the dish will carry, since depending on it, the flavor of the substance or broth will be given. Traditionally this dish is usually cooked with beef or chicken; Once the favorite protein has been chosen, in a medium to large saucepan add between 10 and 12 cups of water, onion, garlic, salt and pepper to taste, simmer and cover for 30 minutes. Next, cob (corn) is added and cooked again for an additional 30 minutes. Then tubercles (roots) such as potatoes and yucas are also added, leaving them on the fire again. Serve with chopped coriander, avocado, white rice and chili.
